Recipe: Fiesta Beef Enchiladas
Ingredients
- 8 ounces 93% lean ground beef
- ½ cup sliced green onions
- 2 teaspoons minced fresh garlic
- 4 oz cream cheese
- 1 cup cold cooked white or brown rice
- 1 can (15oz) diced tomatoes with green chilies
- ¾ cup frozen corn, thawed
- 1 can (15oz) black beans
- 1 cup shredded Mexican cheese blend or Cheddar cheese, divide
- ½ cup salsa or picante sauce
- 18 (6-7 inch) corn tortillas
- 1 can (10 ounces) mild or hot enchilada sauce
Instructions
- Preheat oven to 375 degrees. Spray 13×9 inch baking dish with nonstick cooking spray. Set aside. Cook ground beef in medium nonstick skillet over medium heat until no longer pink; drain. Add green onions, garlic, cream cheese diced tomatoes; cook and stir 5 minutes.
- Combine meat mixture, rice, black beans, corn, ½ cheese and salsa; mix well. Spoon mixture down center of tortillas. Roll up; place seam side down in prepared pan. Spoon enchilada sauce evenly over enchiladas.
- Cover with foil; bake for 20 minutes. Makes 6 serving
- Last 5 minutes of baking, uncover and sprinkle remaining cheese over top of enchiladas
